In a small saucepan, combine the water and maple syrup. Heat over medium heat until fully combined.
Whisk in the cocoa powder and salt until smooth and no lumps remain.
Bring the mixture to a gentle boil and cook for 3–5 minutes, stirring frequently. The syrup will begin to thicken slightly.
Remove from heat and stir in the vanilla extract and coffee extract.
Pour the syrup into clean glass jars and allow it to cool completely. The syrup will continue to thicken as it cools. Store in the refrigerator for up to 2–3 weeks.
