Fresh Milled Pumpkin Bars with Honey

| | |

These soft fresh milled pumpkin bars are made with freshly milled soft white wheat, pumpkin, warm pumpkin spices, honey, white chocolate chips, and crunchy pecans. They’re naturally sweetened with honey—no brown sugar, white sugar, or other refined sweeteners needed!

These pumpkin bars come together quickly in one bowl and make a cozy fall treat that’s just sweet enough without tasting overly sugary. The combination of pumpkin spice, creamy white chocolate, and buttery pecans makes these especially hard to resist.

Why You’ll Love These Fresh Milled Pumpkin Bars

  • Naturally sweetened with honey – Honey and pumpkin provide all the sweetness
  • Made with freshly milled flour – Soft white wheat gives these bars a tender texture while adding the benefits of freshly milled whole grain flour.
  • One-bowl recipe – Less mess and an easy dessert to throw together.
  • Perfect fall flavor – Pumpkin, cinnamon, ginger, and nutmeg pair beautifully with white chocolate and pecans.
  • Easy to double – The recipe makes a 8×8-inch pan, but you can easily double it for a 9×13-inch pan.

Why Fresh Milled Flour?

Fresh milled flour keeps the entire wheat berry intact, including the bran, germ, and endosperm. This means it delivers naturally occurring fiber, healthy fats, and essential nutrients in every bake. When you mill flour fresh, you preserve B vitamins, vitamin E, iron, zinc, and magnesium that disappear during commercial processing.

By using fresh milled flour, you support digestion, steady energy, and overall wellness — not just empty calories.

I have the NutriMill Classic. I use mine several times a week and have had no issues in over two years. It is a great, affordable grain mill.

Fresh Milled Pumpkin Bars Ingredients

  • Soft white wheat – soft white wheat is ideal
  • Baking soda
  • Salt – I use pink himalayan salt, but any salt will work
  • Cinnamon
  • Ginger
  • Nutmeg
  • Butter – melted
  • Honey – raw honey is best
  • Vanilla – I love my homemade vanilla extract!
  • Egg
  • Pumpkin – pure pumpkin, not pumpkin filling
  • White chocolate Chips – Any chocolate chips work, but white pairs perfectly with the fall flavors
  • Pecans – Any nuts you like will work. Or omit for nut allergy.

8×8 Pan – this USA pan is one of my favorite pans in my kitchen!

Instructions

Prep

Prepare an 8×8 baking dish with parchment paper or spray with cooking spray if needed. I love my USA pan because it does not need any spray or parchment!

Prepare the Dry Ingredients

Start by milling your flour. Soft white wheat works best. Whisk the flour, salt, baking soda, cinnamon, ginger, and nutmeg. Set the dry ingredients aside while you prepare the wet ingredients.

Mix the Wet Ingredients

Start by melting the butter. I love using my stainless steel bowls beings I can melt the butter in them using low heat on my stove. I always vote for the option that makes less dishes to wash! Then whisk in the honey and mix till smooth. Next, add the egg, vanilla, and pumpkin. Stir until fully combined.

Combine

Fold the dry ingredients to the wet ingredients and mix until just combined. Add the white chocolate chips and pecans, stirring them in gently. Avoid over-mixing. Spread evenly into prepared pan.

Bake the Pumpkin Bars

Allow the batter to rest while the oven preheats to 350°. Freshly milled flour absorbs more moisture and benefits from a short rest before baking. Don’t skip the 10–15 minute rest — it softens the crumb and prevents density. Bake 24–26 minutes until edges are lightly golden and the center springs back softly.

Tips for Making Pumpkin Bars with Fresh Milled Flour

Weigh your flour. Freshly milled flour can vary considerably when measured by cups. For consistent results, use a kitchen scale and measure 125 grams.

Give the batter a short rest. Fresh-milled flour continues absorbing moisture after it is mixed. A 10-minute rest helps the flour hydrate and gives you a more consistent texture.

Don’t overbake them. These bars should stay soft. Baking until the center is just set will give you a much better texture than waiting until the entire top looks completely dry.

Can I Double This Recipe?

Yes! This recipe makes a 8×8-inch pan, but it doubles beautifully for a 9×13-inch pan.

Simply double all of the ingredients and bake in a 9×13-inch pan. Keep an eye on the bars toward the end of baking since the exact bake time can vary depending on your pan and oven.

Variations

Chocolate Chip Pumpkin Bars

Swap the white chocolate chips for semi-sweet or dark chocolate chips for a more traditional chocolate-and-pumpkin combination.

Fresh Milled Pumpkin Bars with Pecans

You can increase the pecans if you love a little extra crunch. Walnuts would also work well if that’s what you have on hand.

Extra Pumpkin Spice

If you love a stronger pumpkin spice flavor, increase the cinnamon slightly or add a small pinch of cloves or allspice.

How to Store Fresh Milled Pumpkin Bars

Store cooled pumpkin bars in an airtight container at room temperature for several days.

For longer storage, they can also be refrigerated or frozen. If freezing, allow them to cool completely before wrapping or placing them in a freezer-safe container.

Frequently Asked Questions

Can I use store-bought flour?

Yes. You can substitute an equivalent amount of soft white wheat flour or all-purpose flour by weight.

Can I use pumpkin pie filling?

No. Use plain pumpkin puree. Pumpkin pie filling already contains sweeteners and spices, which would change the recipe.

Can I make these without white chocolate?

Absolutely. You can leave the white chocolate chips out or replace them with another type of chocolate. The pumpkin spice and pecan combination is delicious on its own.

Can I double this recipe?

Yes! Double the recipe and bake it in a 9×13-inch pan.
