Fresh Milled Einkorn Brownies

These brownies are the perfect blend of crispy edges and soft gooey middle. Using cacao powder and dark brown chocolate chips it makes a rich, luscious treat!

- 1/2 cup melted butter 1 stick
- 200 g cane sugar 1 cup
- 200 g brown sugar 1 cup
- 3 eggs
- 1 cup cacao powder or cocoa powder
- 1 tsp salt
- 1 tbsp coffee or espresso powder optional
- 1/2 tbsp vanilla
- 150 g einkorn 1 1/4 cup
- 1 cup dark chocolate chips
Preheat oven to 350°
Melt butter in a pan and allow to cool a few minutes. I am all about less dishes so I use a pan big enough to mix all the ingredients. Mix butter, sugars, eggs, cocoa, salt, espresso, and vanilla.
Slowly fold in freshly milled einkorn flour and mix till just combined.
Fold in chocolate chips. Pour into a greased 9x13 baking dish and spread evenly.
Bake for 30 minutes at 350°. The edges should be a little crispy and the middle soft, but set. A toothpick should come out a little crumbly but not wet.
Espresso is optional, but it results in a richer chocolate flavor.
You can use a semi-sweet or milk chocolate, but we love the depth of flavor the dark chocolate adds. You can use chips or chunks.
