Fresh Milled Einkorn Brownies

Fresh milled einkorn brownies are the perfect blend of crispy edges and soft, fudgy middle. Using cacao powder and dark brown chocolate chips it makes a rich, luscious treat!

Why Fresh Milled Flour?

Fresh milled flour is made by grinding whole grains just before baking, which helps preserve nutrients that are lost in processed, store-bought flour. Because the entire grain is used—bran, germ, and endosperm—it provides more fiber, vitamins, and minerals. Many people also find fresh milled flour easier to digest, making it a wholesome choice for everyday baking.

I use the NutriMill Classic. I use mine several times a week and have had no issues in over two years. It is a great, affordable grain mill.

Is Einkorn Better than regular flour?

Einkorn is one of the oldest wheat varieties and has a more simple gluten structure than modern wheat. This makes it easier for some people to digest while still providing excellent flavor and nutrition. Einkorn is naturally higher in protein, antioxidants, and essential minerals, giving baked goods a rich, slightly nutty taste along with added nutritional benefits.

Why use Cacao instead of cocoa?

Cacao powder is less processed retaining more antioxidants, magnesium, and iron, offering a bitter taste and superfood benefits for heart/brain health. For a milder taste you can use regular cocoa powder.

How to make your own brown sugar:

A simple way to make your own brown sugar is to mix cane sugar (or regular granulated) with molasses. I use 200 (1 cup) grams organic cane sugar to 1 tbsp molasses. You can adjust this to how dark you want your sugar. I like the Golden Barrel brand, and have used both the baking molasses or the blackstrap molasses. Both are delicious, the blackstrap has a stronger flavor though. I personally love the Blackstrap flavor. You can hand mix it, but it does take a while to incorporate it. I bulk make it, so I fill my Bosch and use the wire whips to mix it up in a few minutes.

What you’ll need:

  • 1/2 cup melted butter (1 stick)
  • 200 g cane sugar (1 cup)
  • 200 g brown sugar (1 cup)
  • 3 eggs
  • 1 cup cocoa powder
  • 1 tsp salt
  • 1 tbsp coffee or espresso powder
  • 1/2 tbsp vanilla
  • 150 g einkorn (1 1/4 cup)
  • 1 cup dark chocolate chips

Preheat oven to 350°

Melt butter in a pan and allow to cool a few minutes. I am all about less dishes so I use a pan big enough to mix all the ingredients. Mix butter, sugars, eggs, cocoa, salt, espresso, and vanilla. Slowly fold in freshly milled einkorn flour and mix till just combined.

Fold in chocolate chips. Pour into a greased 9×13 baking dish and spread evenly. Bake for 30 minutes at 350°. When done the edges should be a little crispy and the middle soft, but set. Do not over bake!

  • 150 g einkorn 1 1/4 cup
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Melt butter in a pan and allow to cool a few minutes. I am all about less dishes so I use a pan big enough to mix all the ingredients. Mix butter, sugars, eggs, cocoa, salt, espresso, and vanilla.
  • Slowly fold in freshly milled einkorn flour and mix till just combined.
  • Fold in chocolate chips. Pour into a greased 9×13 baking dish and spread evenly.
  • Bake for 30 minutes at 350°. The edges should be a little crispy and the middle soft, but set. A toothpick should come out a little crumbly but not wet.

Notes

Espresso is optional, but it results in a richer chocolate flavor.
You can use a semi-sweet or milk chocolate, but we love the depth of flavor the dark chocolate adds. You can use chips or chunks.
